What Is Private Winemaking?

Private Winemaking is a guided, end-to-end service that converts your harvested grapes into finished wine. Unlike DIY winemaking, this approach combines professional oversight, licensed facilities, and proven techniques to deliver reliable, repeatable results.

Each wine is produced in small batches, allowing for precise control and customization throughout fermentation, aging, and bottling.

Our Private Winemaking Process

Harvest Planning & Coordination

Grapes are harvested at optimal ripeness based on varietal, vineyard conditions, and desired wine style. Timing and handling are carefully managed to preserve fruit integrity.

Small-Batch Fermentation

Your grapes are processed in small lots, allowing for close monitoring and precise control over fermentation, extraction, and flavor development.

Aging & Cellaring

Wines are aged using appropriate vessels—such as stainless steel or oak—based on the varietal and profile you want to achieve. Aging decisions are made collaboratively to refine structure, aroma, and finish.

Blending & Style Development

Final blends are crafted to enhance complexity and balance, ensuring the finished wine aligns with your preferences.

Bottling & Finishing

We coordinate bottling, labeling guidance, and final preparation so your wine is ready for storage, sharing, or private use.

Estate-Grown, Owner-Directed

Private Winemaking is ideal for vineyard owners who want hands-on involvement without managing the technical demands themselves. You can be as involved as you wish—participating in tastings, blending decisions, and style discussions—while we handle the logistics and execution.

Varietals & Vineyard Compatibility

Our private winemaking services support a wide range of grape varietals commonly grown in Southern California and similar climates. Each vineyard is evaluated individually to ensure winemaking methods are matched to fruit quality, site conditions, and production goals.
